Gluten Free Lemon Chicken in the Crock Pot

I am always trying new recipes. I love to experiment in the kitchen and it is fun to make something different. Of course, I have to tweak things to make them gluten free, and in some instances, my food snobery requires that I substitute ingredients.

Michele posted a really easy crock pot chicken dish on her facebook. She said, "Even someone missing their frontal lobe could prepare this meal." I revised the basic recipe just a tad and made it for dinner.

4 fresh lemons
(one zested, all four juiced)
1/2 c Worcestershire sauce
2 cloves fresh garlic crushed
1 stick of butter
8 boneless skinless chicken breasts
Cracked pepper/sea salt

Serve with steamed broccoli and water chestnuts over rice.

After zesting the first lemon, cut and seed the lemons. Add all the juice to the crock pot with the remaining ingredients. Cook on low all day. Remove chicken and set aside. Thicken sauce with a bit of cornstarch and reheat chicken in thickened sauce. Add steamed broccoli and water chestnuts and serve over rice.

The kids ate this and asked for more.

Eli wanted an extra cup of the "dressing" to dip the chicken pieces. He needed more sauce than the others, and CJ was dipping his broccoli.

This is one of those set it and forget it recipes that just works. The lobotomy is optional.
