Gluten Free Turkey Meatloaf

This is a crowd pleaser at our house. I make enough for sandwiches the next day and typically there is never enough. This recipe uses 2 cups of cooked rice so it is great for using up a leftover side dish from the night before or in our case I make enough rice for this and rice pudding.

The ingredients:

2 pounds lean ground turkey (96% lean if possible)
3 eggs
2 cloves garlic crushed
a handful of fresh basil leaves, chopped
cracked black pepper
1/2c grated Parmesan cheese
2 cups cooked rice
1c regular ketchup
(under strict orders we can only use Heinz,
"None of that organic, fancy, no HFCS added crap, that is tasteless ")

Combine all ingredients in a bowl and mix by hand
until well blended. Form a loaf shape and place in a well Pam-ed loaf pan or catering tray (as shown)
drizzle with extra ketchup. Bake at 375 degrees until firm, about 40-50 minutes. Cool slightly before slicing into thick slabs.
